My tomatoes have finally started to turn at a steady pace. I've been roasting all the paste tomatoes along with any extra cherry and beefsteak that we can't eat with fresh basil from the garden. I've roasted 8 pans so far and have at least that many to go from the tomatoes that are already in the house that need to finish turning. A few years ago , I froze all the whole tomatoes to make one large batch of sauce which took forever to cook down and took up a ton of freezer space. Last year I roasted them first and then put in bags to freeze. Was a much quicker process but still took forever blending everything with the immersion blender. So this year before I freeze it, I toss it in the blender first. Each year making sauce gets to be a little easier and the flavor is amazing with the roasted tomatoes.
I took some of the cherry tomatoes and made a batch of bruschetta to put on garlic parmesan toast. I'll definitely make a few more batches before my tomatoes are done for the year.
