All the flavours of a spring roll, in salad form✨
🌱 It’s Episode 4 of our Salad Series - and we saved the best for last!
This Lemongrass Spring Roll Salad is fresh, zesty, and loaded with nutrients — featuring our Zesty Radish Microgreens, which pack 166x more nutrients than mature radish. Yes, 166x!! That gorgeous pop of colour on top isn’t just pretty — it’s also a superfood! 💪🌱
Here’s how to make it👇
🌱INGREDIENTS
2/3 package GoodLeaf Zesty Radish Microgreens
~2 cups vermicelli rice noodles, cooked
1 medium carrot, julienned
2 mini cucumbers, julienned
1/2 avocado, sliced
1 large handful cilantro, chopped
2 green onions, thinly sliced
1 large handful peanuts, chopped
For the Protein:
~2 cups protein of choice (tofu, shrimp or chicken)
1 stalk lemongrass, white parts finely chopped
1 large clove garlic, minced
1/2 tbsp ginger, minced
1.5 limes, juiced
1 tbsp soy sauce
1 tbsp maple syrup
0.5 tbsp rice vinegar
0.5 tbsp sesame oil
For the Dressing:
2 limes, juiced
1 tbsp sesame seeds
1 tbsp rice vinegar
3 tbsp maple syrup
1 tbsp soy sauce
1 tbsp sesame oil
2-3 tbsp water
0.5-1 red thai chili, finely sliced (adjust to your spice preference 🌶️)
🌱INSTRUCTIONS
1. Mix together marinate & add to your protein. Let sit for 15–20 minutes, then cook in a pan over medium heat with a neutral oil. Set aside to cool.
2. Whisk together all dressing ingredients & set aside.
3. Cook noodles according to package instructions & allow to cool.
4. Assemble your salad with all remaining ingredients, top with protein, drizzle with dressing (as desired).
5. Enjoy immediately!
