I have been dreaming about pie all summer. Blueberry is my all time favorite, but when it’s peach season, this one just can’t be beat. Our friends over at Joseph Preli Farm delivered some fresh peaches and I HAD to make a sourdough discard flaky pie crust, to prove to myself it can be done and still be delicious. I present to you, peach hand pies.

Story time! (Cherokee here) I’ve been in the restaurant industry for now 22 years, almost exactly. I’ve met some incredibly talented people on this journey, one of which is currently a big deal in Philly directing a sizable roasting operation for numerous cafe’s. When we worked together here in CT, he was adamant about making all syrups from scratch, in house. When it comes to PSL season, I’m not messing around. So I asked for his recipe that blew the roof off the shop we were at. Now I can share this liquid gold with you. I tested it in a dirty pumpkin chai latte yesterday. I needed a cigarette afterwards 🚬
