Perfect weather this afternoon for our special Sunday afternoon working bee dedicated to the Food Forest. The feijoa trees got a huge haircut and we declared war on the couch grass - though it's probably not one that we can win. 😄

Here is a variation to the Simple Endive (Scarole) recipe. Follow the original recipe, but add the extra ingredients.

The photos show:
1 - Boiled, squeezed and chopped endive
2 - Pan with garlic, anchovies and olive oil
3 - Disintegrated anchovies
4 - Walnuts added to pan
5 - Endive and chopped olives added to pan
6 - Raisins added to pan
7 - Cook, for about 30 minutes, with the lid slightly ajar

We've planted two beds of leeks, dropping the seedlings in holes about 20cm deep and 20-25cm apart and then watering in with seaweed solution (not filling in the holes). We've had to cover the beds with netting to protect them for the brush turkeys!

Why not try growing endive at home? It germinates easily and grows well in autumn.

Simple Endive (Scarole in Italian) Recipe
1. Dip the endive 2 to 3 times in boiling water to get rid of some bitterness.
2. When cool, squeeze out excess moisture and chop into pieces.
3. Add some extra virgin olive oil, finely chopped garlic and 3 to 4 anchovies in a frypan and cook over low to medium heat until the anchovies disintegrate. Be patient.
4. Add endive and cook about 10 more minutes over medium heat, stirring gently, until the endive is tender and has absorbed the flavours.
Note:
* Do NOT add salt as the anchovies are salty enough.
* Eat alone or as an accompaniment.
