Deconstructed Maine Lobster. Shipped to New York.
The deconstruction technique invented by anatomist Edmé François Chauvot de Beachêne in France in the 19th century involves the meticulous disassembly of all the components of a skull or crustacea. The pieces are re-articulated and positioned in an exploded array on a copper wire support, then airbrushed to bring out natural colors.

The final weeks of spiny lobster season 🌊 are here, coming to an end March 31st. (Also, my birthday 😉)
