Microgreens are tiny vegetables and herbs that are harvested at their maximum nutrient density, at the formation of the first "true leaves" of the plant. In 2012, a study published at the Unive

rsity of Maryland concluded that microgreens contain between 4 and 40 times the nutrient density of their full grown relatives. Thus, a tablespoon of raw microgreens is a full serving of vegetables. In addition to their superfood properties, microgreens pack tremendous flavor into a small bite. The team at Sweet Peas Urban Gardens believes that urban farming is fundamental to the creation of healthy, sustainable food production for our growing metropolitan society. As more folks flock to revitalized inner cities and neighborhoods, the demand for locally produced fresh food is expanding, catalyzing a re-evaluation of the potential of these traditionally non-agricultural landscapes. Whether you like them scrambled, poached, or baked into your favorite treats, today is the day to celebrate the incredible backyard cluckers that make it all happen. Behind every perfect egg is a hard-working hen. In our backyard flock, we’ve got a whole crew handling production:

👑Queen B, our regal Cinnamon Queen
👯‍♀️Red Bottom and Broody, our duo of Delaware Reds
🐓and our two trusty Barred Rocks who prefer to remain anonymous, but never miss a shift!

To celebrate, here are a few facts about these nutrition powerhouses!

🥚The Ultimate Brain Food: Eggs are packed with choline, an essential nutrient that is a building block for brain development, memory, and mood regulation.
🥚One large egg delivers about 6 grams of high-quality protein, containing all nine essential amino acids that our bodies can't produce on their own. Because they're, um, "mature" a few of our hens regularly produce eggs that have multiple yolks in them - meaning even more protein!

🥒It's National Cucumber Month, so we thought we'd share a simple recipe for refrigerator dill pickles!

🥒So, what is a "pickling cucumber?" They're specific varieties of cucumbers cultivated to remain crisp, firm, and flavorful when preserved in brine or vinegar. Unlike standard slicing cucumbers, they are distinguished by their shorter, blockier shape, bumpy skin with tiny spines, and smaller, undeveloped seed cavities. They're abundant at farmers markets during June.

Looking for the perfect way to break up your work week? Come get your hands dirty and your glasses filled this Wednesday from 5-7pm at our Community Garden!

Here's the dirt on what we'll be doing:
🌳 We’re putting down roots—literally! We’ll be planting brand-new fruit trees that will feed our community for years to come.
🪵 Giving a little support: Helping out our existing trees with some fresh structural supports.

Of course, hard work deserves a refreshing reward. We’ve got the drinks covered on the house. Wine for the 21+ crowd (don't forget your ID), Kombucha, sparkling water, lemonade, and more! Grab your gardening gloves and bring your friends!

Saturday you'll find us at the Holly Springs Farmers Market's rain venue inside the parking garage at the corner of Avent Ferry and West Ballentine Street - about one block from the regular market space.
