Virtual Summer Nutrition & Wellness Homeschool Class

If you’re a homeschooling mama exploring summer learning options for your high schooler, I’d love to invite you to a relaxed Mama’s Tea Time this Thursday at 2:00 PM (CT).

This is a casual Zoom gathering where I’ll share the heart behind my course, Nutrition & Wellness 101: Stewarding Your Health with Biblical Wisdom—a faith-based, audio-format summer course designed for high school homeschoolers.

Whether your student is already enrolled or you’re just considering whether it’s a good fit, this is a space to ask questions, hear more about the vision, and connect with other like-minded moms.

We loved visiting with Joy at her farm this past summer. This is a wonderful opportunity to meet her and find out about the healing power of equine therapy.

Join us the first Sunday in Nov (Nov. 3) for our Fall Open House! Free and open to the public. Please RSVP if you plan to attend. We will have photo booths where you can get pictures with a horse (donation appreciated), free demo sessions for our equine assisted therapy program, music, and fun. Bring a pot of chili or a side dish to share. Rain date is the following Sunday, Nov. 10.

Update:

It is with a heavy heart that we announce the cancellation of our Christmas event at The Farm at Rivendell this year. Due to some unexpected changes in our family situation, we feel it’s best to prioritize time with our loved ones this season.

This was not an easy decision to make, as we were truly looking forward to celebrating with all of you. Your support and enthusiasm have meant so much to us, and we are incredibly grateful for your understanding.

We hope to welcome you back to the farm in the future when the time is right. In the meantime, we wish you a peaceful and joyful holiday season filled with love and warmth.

What would you do with a mountain of carrots?

Our family was honored to serve at The Well Outreach mobile food pantry today with The Church at West End. These carrots were leftover from the huge mountain we distributed to other families.

Sometimes as mamas as we have to be flexible with the supplies we have. We get creative and resourceful to make our budget stretch.

To make quick work of these carrots, I’m planning to shred some of these in my food processor and cook the others in my Instant Pot. Well, actually, my not-so-little Farmers have begged for this job!

Do I plan to peel all these carrots? No indeed!!

There are many wonderful nutritional properties of in the whole carrot just under the skin — including some that support hormone health and detoxification. I haven’t peel my carrots in a long time — just scrub and proceed!

Carrots will store for a long time because they are a root vegetable, but I want to make sure these don’t go to waste!

I’ll freeze some of the baked goods so that we can have nourishing options for the next few weeks of school and have some to share with our friends and neighbors.

I’m off to make some carrot soufflé, gluten free carrot breakfast bars, roasted carrot fries, and ancient grain carrot cake…

Any other ideas?
