Recipe Spotlight: Greek-Style Eggplant Stew 🇬🇷
This one-pot, veggie-packed dish is perfect for a summer dinner.
Sauté onions, bell peppers, carrots and garlic with warm spices, then simmer with eggplant, chickpeas, and tomatoes until velvety and tender. Serve with a swirl of olive oil, fresh herbs, and crusty bread. (Bonus: it’s vegan, gluten-free, and full of flavor.)
