Not only are Blue Oysters Mushrooms really cool to look at, their velvety dense and meaty texture makes this mushroom a standout within it's species. They have a very unique briny, but slightly sweet, delicate seafood flavor making them great for many soups, stews, pasta and grain dishes.
Blue Oysters are also a great source of beta-glucans. Beta-glucans can help to improve immune system function by stimulating the production of white blood cells and increasing the activity of natural killer cells. They are also rich in ergothioneine, an amino acid with powerful anti-oxidant and anti-inflammatory properties and can help protect against stomach ulcers.
Last but not least, despite the name, Oyster Mushrooms don't actually taste like oysters. Supposedly, they get their name from their shape. Yeah, it doesn't make sense to us either.
