Our amish neighbors made this for us once and I’ve been craving it since and finally got the recipe to make it!
🥞 Pancake Pizza
Makes: 1 large 9×13-inch pan
Oven: 400°F
Bake time: About 15 minutes
Ingredients
* 3 cups pancake batter
* 1 lb. pork sausage
* ⅓ cup flour
* 3 cups milk
* Salt & pepper, to taste
* 12 eggs
* 1 cup shredded cheese (or measure with your heart 😉)
* 1 lb. bacon, cooked and crumbled
* Maple syrup, for serving
* Butter, for greasing the pan
Instructions
1. Preheat the oven
Preheat your oven to 400°F.
2. Prepare the pan
Grease a 9×13-inch cake pan thoroughly with butter to prevent the pancake from sticking.
3. Prepare the pancake base
Measure out 3 cups of pancake batter and pour it evenly into the prepared pan. Gently spread the batter so it covers the bottom in an even layer.
Bake at 400°F for about 15 minutes, or until the pancake is cooked through, lightly golden, and set in the center.
4. Cook the bacon
While the pancake is baking, cook 1 lb. of bacon until crispy. (I baked mine in the oven because it’s easier and less messy!)
Drain on paper towels, let cool slightly, then crumble into bite-sized pieces.
5. Make the sausage gravy
Brown 1 lb. of pork sausage in a skillet over medium heat, breaking it up as it cooks.
Once the sausage is browned, sprinkle ⅓ cup of flour over the sausage and stir until the flour is well incorporated.
Slowly add 3 cups of milk, stirring constantly to prevent lumps. Season with salt and pepper to taste.
Bring the gravy to a gentle boil, continuing to stir, and cook until it reaches your desired thickness. Remove from heat and keep warm.
6. Scramble the eggs
Crack 12 eggs into a bowl and whisk together. Cook in a skillet over medium heat until scrambled and just cooked through. Try not to overcook them—they’ll be going on top of the hot pancake.
7. Assemble the pancake pizza
Once the pancake is finished baking, carefully remove it from the oven.
Layer everything right on top of the pancake:
* Spread the scrambled eggs evenly over the pancake.
* Sprinkle on the shredded cheese. (I measured this with my heart, honestly. 😂)
* Spoon the sausage gravy evenly over the top.
* Finish with the crumbled bacon.
8. Serve
Slice into squares and serve warm with maple syrup drizzled over the top or served on the side.
***the syrup sounds weird but is a MUST!!🤣
