The best way to learn new things is to be curious and ask questions. We try to share what we learn with YOU! This morning someone came in asking about "Light Cream". Apparently a local coffee shop uses that in their drinks. We don't carry it, and we wanted to know the difference compared to Heavy Cream or Whole Milk. SO..... It's all about milkfat.

2% milk has 2% milkfat. Whole milk has 3.25%-3.5%. Half and Half is 10.5%-18%. Light Cream is 18%-30%. Light Whipping Cream is 30%-36%. And Heavy Whipping Cream is at least 36%.

If your recipe calls for light cream, substituting with half and half will likely not have enough fat content to produce the desired results and subbing in light or heavy whipping cream could be too dense for the recipe. You are better off using heavy cream and diluting it with milk. Just combine 1 part heavy cream with 1 part milk to make your "light cream."

This is always a strange time of year. The weather can't decide what season it wants and we start getting itchy for the things to come. Pretty soon the land in this picture will be tilled and start turning green with baby plants. The trees will fill out and flutter in the breeze. Our gardens are being planned and we simply wait. We wait with hope for the things to come. Have a beautiful spring day!
