Nothing makes me feel more connected to my grandmother than stretching one $4.98 Sam’s Club rotisserie chicken into 8+ full meals for my family of seven. ❤️
If you're looking for budget-friendly meal ideas, here's my process:
🍗 Step 1: While the chicken is still warm, I remove all the meat, chop it, and divide it into two freezer bags (the two bags at the bottom of the photo). Each bag usually holds a little over a pound of chicken.
🥣 Step 2: I place the carcass in a large stock pot, cover it with water, bring it to a boil, then reduce it to a gentle simmer. After about 2 hours, I turn off the heat, cover it tightly, and let it "steep" overnight on the warming burner.
🌅 Step 3: The next morning, I strain the broth into quart containers (I buy the 3-pack from Dollar Tree) and usually end up with 4–6 quarts of rich homemade broth.
🍴 Step 4: Before tossing the bones, I pick off every last bit of meat and freeze it separately for soup.
Here's what this one chicken will become:
🥣 Minestrone Soup – 2 quarts of broth (2 meals)
🍝 Jambalaya Pasta – 1 bag of chopped chicken (2 meals)
🌯 Chicken Burrito Bowls – 1 bag of chopped chicken (2 meals)
🥦 Chicken & Wild Rice Soup with Broccoli and Asparagus – 3 quarts of broth plus the soup chicken (2 meals)
For us, each recipe makes dinner and enough leftovers for lunch a day or two later. I homeschool, and my husband works from home, so those lunches are just as important as dinner.
