Do it. Get the mini crockpot.
This isn’t an ad, just a soup lover so happy that I can heat up soup in the office in something else than a microwave. I’ve used thermoses before too, but this is just so nifty and I can literally throw in frozen soup cubes in the morning and by lunch have hot soup. For only $30 it’s the best Christmas gift I’ve gotten myself in a while.

My tried and true Mac and cheese recipe!
For Thanksgiving I made the Mac and cheese recipe my Mom made when I was growing up and that I’ve made my entire adult life. It’s one of the many iterations from the back of the Mueller’s elbow macaroni box. I doubled the recipe and used bronze cut cavatappi and 8 oz extra sharp cheddar from Aldi as well as 8 oz of Cabot Seriously Sharp Cheddar. In addition to the dry mustard, I also added onion powder and put a bay leaf in the roux after I added the milk (it comes out before you put the cheese in). These things make the cheese flavor pop! I used a few tips I picked up from this group: buttering my noodles before mixing them into the cheese sauce and warming my milk before adding it to the roux so it would thicken quicker.

It’s just kraft three cheese shells but OH MAN DID I GO TO TOWN.

I added in 1/2 sharp cheddar, 1/4 Parmesan, 1/4 Swiss, and one “gourmet” sharp cheddar single, and two and a half cups of almond milk.

I seasoned it with salt, pepper, onion powder, garlic powder, cayenne pepper, and paprika.

It’s delicious and spicy and creamy and savory.

But my lame family likes their mac and cheese plainer than the inside of a podcast bros brain. They complain it’s way too spicy for them to eat.

I’m having some water with this. I’m in heaven.

My baked Mac and cheese recipe
I boiled the noodles until al dente, tossed in dish. For the sauce I start off with three generous blops of butter, melt it, add it a cup and a half of whole milk, and then a whole 16 oz thing of heavy cream. Then I added (repeatedly, kept tasting ) salt, pepper, smoked paprika, cayenne pepper and garlic powder. Next I added a whole bag of triple cheddar and mozzarella. Then I pour in on the noodles, add another bag and a half of the cheeses, add more paprika and then in the oven at 350 for 25 mins!

Always been a sucker for baked Mac. Tried a bunch of recipes over the years. This has been the top go to recipe. With a little tweaks over the last year especially, it is finally perfect
