Here's how we store asparagus at home for maximum crispness and longevity. 1) Remove rubber bands and trim off about 1/2 inch of the woody end. 2) Loosely tie spears together with twine and place them upright in a jar containing about 1 inch of water. 3) Lightly cover exposed tips with a plastic bag. 4) Place the jar in the fridge and change the water every 2 or 3 days. Asparagus should remain fresh and crispy for 10-14 days but...if you're anything like us...it'll be eaten long before that!

It’s a bit of a slow start this week for asparagus, but don't let the cool breeze fool you - we're sure the spring surge is just around the corner!

• The Cool Down: We’re looking at a chilly start with Monday and Tuesday overnights dipping down to near 0°.
• The Warm Up: Hang tight! By Friday and Saturday, we’re hitting a high of 19°C. That jump in temperature is exactly what our asparagus needs to really start popping.

HEADS UP - there is a chance of frost Tuesday overnight. If that frost hits, it will significantly impact our supply for the remainder of the week. Stay tuned.

As the "spring heat" sets in later in the week, we expect supply to increase significantly.
