This is due to a genetic variation in some people's olfactory-receptor genes, particularly a gene called OR6A2. This gene makes them highly sensitive to aldehyde chemicals present in the herb, which are also found in soaps and cleaning products, triggering a soapy or chemical sensation instead of the herb's usual green flavor.
