Erbe Farms Neighborhood, family owned urban farm in Saint Charles, Missouri producing gourmet mushrooms & herbs. Anyway... we started posting our progress on Facebook.

In late 2016 we started growing our own microgreens and salad mixes indoors. We had so much fun learning new methods of growing different species of plants that our dining room had started to become a greenhouse and we had way more produce that we could eat between the two of us. This year (2017) we have started to begin expanding / formalizing our indoor growing area as well as learning about mor

e plants. While sunflower micros are awesome... you can only eat them with every meal so long :-)

Currently we're getting ready to start sprouting for our gardens outside starting with a huge batch of lavender, followed by another batch of peppers, tomatoes, squash, eggplant, and a few others. Even more exciting, when we finish that, the rack will be converted into a nutrient film aquaponic system for indoor lettuce, spinach, kale, and chard. Right now we want to see how much of our own food we can produce, as well as try to develop a steady enough system to supply some local restaurants with some portion of their produce. We've even been looking into the organic certification process for down the road. Then people started asking about it when we didn't, so we figured our little micro farm deserved it's own page. So here you have it!

Got cookies fresh out of the oven. Got mushrooms in the case. Got fresh made mushroom pasta in case you want to make your own pasta creation.

Pepper jack came out really good this week and really happy with the pasta salads in general. Made the tweaks I wanted on the existing recipes. The new dill pickle is really good too. Kinda messed up the chik peas, so half pricing them, but otherwise really happy with it.

Waiting on some new ingredients to show up so let play time begin. Gome on by and check us out if you're in the neighborhood 😁

Little late in the day for a post but what can I saw, we've been busy.

First off, our new phone number is not working apparently, so if you have tried to call us, sorry about that. Hoping third time will be the charm and they fix it for real soon.

Mushroom wise, we got some nice big petaled Blues, Pioppinos, Chantrelles, and a bit of Lion's Mane.

On the food side we have cheeses, pasta salads, fresh pasta, ravioli and cookies all stocked up. Gonna get some pizza dough rolling so we can fill them back up and we'll darn near have a good inventory for the weekend.

Switched out the Greek pasta salad with a Dill Pickel pasta salad. Tweaked some of the other salad recipes a bit too. Really getting them dialed in.

If only there was something tasty but not as big as a pizza to go with them 🤔

We'll be here tonight till six but back at it bright and early tomorrow. Habe a good one all!

We met a local artist at the Funga Fair who's art we absolutely loved. We got one painting for home, but we're planning on having more of artwork down at the shop for anyone else who thinks is as awesome as we do. Had to lead with that cause we really like our painting.

Anyway, so much cool stuff on the verge of coming out. So much stuff going on behind the scenes. When we opened up the kitchen just over five months ago the goal was to have the whole micro deli bakery concept ironed out within six months. We had some pretty serious progress in the kitchen over the last couple weeks we haven't even talked about yet. We're so close it's stupid. Stupid close.

The shop is a pretty thin on products this week since we were wrapping up other development, but it looks like we should have a decent harvest of blues and Lion's Mane for the weekend. Hopefully we can get the deli case filled back out for the weekend.

Currently we've got a nice stock of Chanterelles we're playing with, making ravioli and soon some pizzas, but I don't anticipate them hanging around too long.

We'll be open till 6pm today if you're in the neighborhood and need some mushrooms.

Man... Yesterday at the Funga Fair was freaking awesome! I was so busy I didn't stop to get picturs to post. So many folks came out, the other vendors had such cool stuff, and the folks from the really put on a great event. Can't wait till they do it again next year!

Some friends came by with a bit of mushroom treasure as well! A Lotta these guys are gonna turn into some ravioli and pizza here at the shop, but I've got a few pounds here in the deli case if anyone wants some chanterelles 😁

Gonna be down at the shop today, getting some restocking done and playing with some of these wild shrooms! Ill be there till 6pm so come on by and say hi!

If you haven't heard, this weekend the is having its first ever "Funga Fair" and we get to be one of the first farms to set up a booth there!

It's gonna be awesome! Speakers, other cool farms, artists, all sorts of fun stuff. Ever wanted to get into foraging, these are some of the folks you're gonna want to talk to.

We were going to try and get the shop opened up and do the fair but the reality that we're pretty small still set in last night. So.... We're gonna be closed down on Main Street tomorrow so we can focus on the fair.

Good news is we just about have everything figured out well enough to start training some help so we can really open up the deli, "for real".

Thanks all for understanding about closing the shop, and hopefully we'll see you down at the tomorrow from 10 to 4! The event is free with admission to the garden.

Also, If you live in St. Louis or St. Louis County, I'm pretty sure admission is free before noon. Double check, but I think that is how it works.

The shop will be open today till 6pm. We've got a few pounds of mushrooms and handful of pizzas. Dad will be running the shop while we bring stuff down to the garden, so come on by and say hi if your down in the area.

Happy to finally see some color back in the Blues! Looks like everyone is rebounding well from that heat.

Dad finished up making six more new shelves for us since the first two worked so well. Looking forward to swapping out the old ones and getting these guys full of mushrooms. Soooo much easier to clean!

Lots of stocking work this week too. Made up nearly 1000 cookies to fill out half the new chest freezer. Knocking out some powders as well. Hopefully get on to some pasta or pizzas today if I have enough time.

Got a few pounds of blues and Lion's Mane in the case if you're out and about today. Have a good one all, time to kick on the lights grind some powder. 🤪

Playing around with breads again. Did some marble rye. Threw a shake of blue oyster in for fun, but don't think I can rightly call it "Mushroom Marble Rye". Maybe I'll go heavy on a loaf and see if it works.

Folks in general seemed to like the pasta salads a lot yesterday. Not so much so much interest in the Greek, but we'll give it another week before we pull another salad off the bench.

Still got a little cheese left but people seemed to like it pretty much as well. We're pretty thin all around today but it's Sunday we should have enough pizzas to get through the day.

So this week was crazy busy! Bad news is... We are cleaned out of mushrooms. Good news is... We've still got a lot of our other stuff, well... Some of our other stuff...

We're gonna be sampling the vegan cheese and pasta salads as long as we've got them to sample, so come on by and give some a try.

While you're here, grab a crepe from our neighbors ( La Vie Vegan Bistro ), and partake in some of their Bastille Day celebrations. Gonna have stilt walkers around noon on the patio. Should be fun.

Finally got to put in some time on our mushroom pasta! I think we've got the blend about where we want it for a solid standard mix. We also had some good results on gluten and keto friendly pastas, but we'll get back to those once we dial in some recipes.

We made up six pasta salads we really like and plan to have avaliable, with at least a couple in the deli case at any given time.

Roasted red pepper, Garlic mushroom, Dirty Martini, Greek, Street Taco, and Cowboy. Did them all vegan too but don't tell anyone, they won't know.

Anyway, come on by this week and try some samples and help me lock in these recipes.

Time to go make some more cheese! Have a good one folks 😁

Finally about back into a rhythm after the last couple of weeks of heat and updates.

We're a little low on mushrooms after restocking everything else, but we've still got some Lion's Mane and Blue Oysters ready in the case.

Pizzas are pretty well restocked and even got some "awesomes" on the shelf. The cases look so empty now that the cookies and ice cream have moved into a new freezer. Fortunately we've got plenty of stuff we've been working on to fill them back up.

Still have a little vegan cheese left for samples if you're up for giving it a try. Even got classy and picked up some crackers 🤪

Just about got everything fired up at the shop so if you're in the area come on by and say hi!

Finally back to my kinda weather! Took a minute this morning to check out the sisters garden next door. They got the new library up and it looks awesome! Very cool tribute to some cool ladies that aren't with us anymore. Check it out next time you're down on Main Street.

Gonna be down here till 6pm playing with some breads and sauces. Back to normal hours and what used to be "full inventory" next week.
