Get ready to enjoy a slice of paradise with this moist Hawaiian Pineapple Cake, loaded with tropical flavors and delicious frosting! 🍍🍰🌴
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 (20-ounce) can crushed pineapple, undrained
- 1 cup unsalted butter, softened
- 1 (8-ounce) package cream cheese, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 cup toasted pecans, chopped
- 1/2 cup sweetened shredded coconut
- Pineapple chunks (optional, for decoration)
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
3. Add the eggs, vanilla extract, and the entire can of crushed pineapple (juice included). Stir until everything is well combined.
4. Divide the batter equally between the prepared pans.
5. Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
6. For the frosting, beat the softened butter and cream cheese together until smooth. Gradually add the powdered sugar, mixing until you have a thick and spreadable frosting. Stir in the vanilla extract.
7. To assemble the cake, place one layer on a serving plate and spread a generous amount of frosting over the top. Sprinkle with toasted pecans and shredded coconut. Add the second cake layer and frost the top and sides.
8. Decorate the cake with more pecans, shredded coconut, and optional pineapple chunks if desired.
9. Chill the assembled cake in the refrigerator for 30 minutes before serving. Slice it up and enjoy a taste of the tropics!
