Summer 2023 was not one I'd choose to repeat. Extreme heat, drought and a gym accident resulting in an elbow replacement set me back in gardening, work and life...thankful I still have my arm and am slowly recovering.

I made this today- very easy and quick! I like baking it in my grooved cast iron fry pan. I added on top before baking (from the garden) oregano leaves, parsley, chives. It’s delicious with any fresh herbs!

I made this today- easy & quick! I like baking it in my grooved cast iron fry pan sprayed w EVOO. Added on top (from the garden) before baking: oregano leaves, parsley, chives. It’s delicious with rosemary, tarragon, any fresh herbs! We added guacamole on top.
Socca Flatbread
Ingredients
1 cup Garbanzo Bean Flour
1/2 tsp Salt
1/4 tsp Ground Black Pepper
1/4 tsp Garlic Powder optional
1 cup Warm Water
1 Tbsp Olive Oil optional
Fresh or Dried Herbs optional
Instructions
1. In a bowl, mix the garbanzo bean flour, salt, pepper and garlic powder together. Whisk the water and olive oil into the flour mixture until completely combined. Set this mixture aside while you preheat your oven to 450°F. Place a 10-inch cast iron skillet in the oven while it preheats.
2. Liberally grease heated skillet with olive oil (olive oil spray coats the pan well). Pour batter into heated pan and bake for 15 minutes, or until set and golden brown. Remove from pan and serve immediately with toppings of your choice.

We used our just picked heirloom tomatoes are delicious. Made salad with cucumbers, fresh mint, fresh basil, microgreens and 3 kinds of vinegar. That was about 9 kinds of plants used in just one simple salad.

Boost your micro biome with plant diversity by adding even small amounts of herbs to everything.
Add stevia leaves to anything to add sweetness- sauces, teas, cereal, yogurt.

Love your micro biome: Goal is minimum of 25 different plants eaten weekly & small amounts count such as a few nuts, seeds or herb leaves. We often eat 25 in a day!!

Fresh Stevia rocks!
I've been making iced tea with tea bags and adding sprigs of mint and stevia. (Adding Microbiome diversity). I use hot water at first to brew the tea then fill jar with ice cubes and more water.m. We are excited that the fresh stevia makes the tea sweet enough so no need to add additional sweeteners! A happy surprise.
