🍪The Ultimate Summer Treat: Homemade Ice Cream Sandwiches🍦

These little beauties were a staple in our freezer when the kids were growing up—perfect for after school, pool days, or sneaky late-night snacks. Soft-baked cookies + creamy Blue Bell Vanilla Bean = pure joy in every bite. 💛

👩‍🍳 Pro tip: Pair your cookies before adding the ice cream so they match perfectly, then wrap each sandwich in plastic wrap and pop them back in the freezer. Trust me, they’ll disappear *fast*—there may even be a little friendly fighting over the last one. 😉

📌 Save this recipe and thank me later:

✨ **Cookie Dough:**
1/3 c butter
1/3 c Crisco
1/2 c brown sugar
1/2 c sugar
1 egg
1 tsp vanilla
1/2 tsp baking soda
1/2 tsp salt
1 1/2 c flour
1 (6oz) bag of chocolate chips (or switch it up—cranberries, macadamias, dark chocolate…)

🍪 Bake at 350°F for 7–9 min. Cool, freeze, fill with softened ice cream, smooth edges, wrap, and freeze again.
