Sharing a favorite no bake ice box (freezer) Gluten Free cookie or power bites recipe. Ingredients needed for the cookie/bite:
-Dates (pits removed) 10-12 dates.
-Almond butter about 1/2 cup may need little more if doesnβt feel sticky enough.
-Shredded unsweetened Coconut Flakes about 1 cup. **replace with nuts if not a fan of coconut**
-Rice Cakes (I like the brown rice thin squares from Trader Joeβs) about 6 squares.
Using a food processor for chopping and mixing together add all the ingredients and make sure to crumble the rice cakes to make mixing easier.
I pulse a few times then let it mix for a good minute.
*Test it to see if easily form a ball, if not add a little more peanut butter. If you went a little crazy and too runny add more rice cakes.
You will want to line a cookie sheet or other container that will easily fit into your freezer with parchment paper or tinfoil. Form the mixture into bite size balls and place on cookie sheet.
For the topping I use Ghirardelli extra dark chocolate chips. I put about 1/4 - 1/2 cup in microwave safe bowl. I add a little coconut oil (1/2 tsp) to chips before I melt.
Microwave in 30 sec increments with mixing between to make sure not clumping or cooking the chocolate.
Once chocolate nice and melted using a spoon you can drizzle or just cover top with melted chocolate.
Final step that really gives nice pop is sprinkling high quality sea salt over top (I like Maldon sea salt). Then place in freezer for at least 30min to set.
For me, once done I store in a bowl in the freezer and grab as needed. Excellent to have 1 -2 before your run along with your water and whatever other fuel you eat pre run. Perfect to put in ziplock bag and stick in running belt/vest for your sugar/carb fuel on long runs during cold months.
