While mature vegetables are dietary staples, their "micro" versions offer a vastly different nutritional profile. According to a comprehensive study by Xiao et al. (2012) published in the Journal of Agricultural and Food Chemistry, red cabbage microgreens contain approximately 40 times more Vitamin E and 6 times more Vitamin C than the fully grown plant.

During the early stages of a plant's life, all the vitamins, minerals, and polyphenols required for its entire growth cycle are concentrated within the first few leaves, known as cotyledons. These antioxidants, particularly ascorbic acid (Vitamin C) and tocopherols (Vitamin E), are vital for protecting the young plant from environmental stressors, and they provide significant anti-inflammatory benefits when consumed by humans. 🥬🌱

- Favorite toasted slice of bread
- Spread spoon full of spicy hummus

- 1 Cup of your favorite microgreens
- 1/2 cup grated carrots and/or beets
- 1/4 finely sliced snap peas, radishes or any other veggies of your chosing
- 1/2 cup finely chopped fruit - apple, pear, berries, etc
- 1/4 cup sliced tomatoes
- 1/4 cup feta cheese
- 1/4 cup sunflower or pumpkin seeds
- Oil and vinegar for dressing

Make sure to wash and dry microgreens. Mix all ingredients and enjoy! Recipe
