Recently, I made extra mashed potatoes for dinner. I added flour, eggs, and a little more milk to the leftovers to make potato cakes. I then took my cookie dough scoop and scooped it onto a baking sheet lined with parchment and flatten them some. I froze them and then transferred them to a freezer bag with waxed paper in between the layers. I can take out as many as I need to fry. You can thaw them, or fry them slowly if frozen. I love potato cakes!
