Quillin Leather & Tack moved to Main Street in Paris, KY in 1982. We're a full service tack and leather goods shop and one of the largest "Custom Shops" in the nation and hand crafts over 17,000 halters a year. With only a few exceptions, every leather item they sell is made in their Main Street workroom by

craftsmen with a combined 80+ years of experience. Quillins' 12 employees produce a variety of products, from key tags, belts and dog collars to halters worn by leading stallions and multi-million dollar Keeneland sales toppers. Quillins supplies local and international customers and boasts a client list that reads like the whose who of the thoroughbred industry. Attention to detail, impeccable craftsmanship and personal service has made Quillin Leather & Tack synonymous with quality for OVER 30 years.

Crockpot Creamy Potato & Hamburger Soup
Ingredients
1 pound ground beef
1 large onion, chopped
2 cloves garlic, minced
4 large potatoes, peeled and diced
3 large carrots, sliced
2 celery stalks, sliced
4 cups chicken or beef broth
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon paprika
Salt and pepper to taste
1 cup heavy cream
2 cups shredded cheddar cheese
1 cup milk
2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening)
Fresh parsley, chopped (for garnish)
Extra shredded cheddar cheese (for garnish)
Instructions
1. Brown the Ground Beef:
In a large skillet, brown the ground beef over medium-high heat until it’s no longer pink. Drain any excess fat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.
2. Prepare the Crockpot:
Transfer the browned beef mixture to a crockpot. Add the diced potatoes, sliced carrots, and sliced celery.
3. Add Broth and Seasonings:
Pour in the chicken or beef broth. Add the dried thyme, dried parsley, paprika, salt, and pepper. Stir to combine.
4. Cook on Low:
Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes and vegetables are tender.
5. Add Cream and Cheese:
Stir in the heavy cream, shredded cheddar cheese, and milk. If you prefer a thicker soup, add the cornstarch mixture and stir well. Continue to cook on low for an additional 15-20 minutes, until the cheese is melted and the soup is creamy.
6. Serve:
Ladle the hot soup into bowls and garnish with fresh chopped parsley and extra shredded cheddar cheese if desired. Serve with crusty bread for a complete meal.

3 pounds of onions (with 4 ounces of melted butter) in the crockpot overnight. French Onion Soup later tomorrow

ETA: I am overwhelmed…I posted 11 minutes ago…and already 182 likes.

French Onion Soup..Slow Cooker (a combination of two on-line recipes)

3 pounds onions, which is around 6 large onions ...I weigh

1/2 cup (4 oz) butter, melted

2 cloves garlic, minced

1/2 cup dry sherry wine ...I didn't have any the first time I made this...I do now

8 cups beef stock/broth

1 bay leaf

1/4 tsp dry thyme (or 3 sprigs fresh)...I don't especially like thyme, so I omitted

salt and pepper to taste ...my broth is salted, so I add no salt

Baguette, sliced ...I did use baguette ...but might the next time, use French bread. (I find a baguette too holey)

8 oz of Gruyere cheese, shredded, divided (check recipes if you wish to use Gruyere and combine with another cheese or two ...I used just Gruyere

1. Cut onions in half, and slice thinly. Place them in the slow cooker. Add your melted butter and stir well so all onions are coated. Put this on low overnight, 10 - 12 hours.

2. Add the garlic. Stir sherry into onion mixture; scrape the bottom to dissolve the small bits of browned food.

3. Throw in the thyme, bay leaf, salt/pepper and broth. Stir well. Cook on low for 8 - 10 hours or on High for 4 - 6 hours. I did a combo of that ...when I needed it to be ready, I went with it. After all the onions are cooked ...the rest is just melding.

4. Preheat oven to 400ºF. Slice bread to 1/2" thick slices. Brush both sides lightly with olive oil. Arrange on a baking sheet and bake 6 - 8 minutes until golden brown at the edges. I did about 8 minutes ...flipped the bread and did another 2 minutes.

5. Once soup is out, set oven to 'broil'.

6. Pour soup into bowls..3/4 full or so. Sprinkle the top with a bit of your cheese. Lay the bread on top ...and sprinkle the rest of the cheese on top. Broil for 2-3 minutes ...until cheese topping is lightly browned and bubbling.

Lasagne Soup tonight! Wonderful meal on a cold rainy night. I use these little noodles that look like mini-lasagne, called mafalda. I only use 6 oz. Must express something to keep getting my recipes.... Thank you
Ingredients:
1 lb ground beef
1 onion, diced
3 cloves garlic, minced
2 cups beef broth
1 can (14.5 oz) diced tomatoes
1 can (15 oz) tomato sauce
1 tsp dried basil
1 tsp dried oregano
1/2 tsp red pepper flakes
1/2 tsp salt
1/4 tsp black pepper
8 oz lasagna noodles,
broken into pieces
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Directions:
In a large pot or Dutch oven, brown the ground beef over medium-high heat until cooked through. Drain off any excess fat.
Add the onion and garlic to the pot and sauté for 2-3 minutes, until softened.
Pour in the beef broth, diced tomatoes, tomato sauce, basil, oregano, red pepper flakes, salt, and pepper. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low and let simmer for 10-15 minutes.
Add the broken lasagna noodles to the pot and stir to combine. Let simmer for an additional 10-15 minutes, or until the noodles are cooked through.
Stir in the heavy cream, Parmesan cheese, and mozzarella cheese. Cook until the cheese is melted and the soup is heated through.
Serve hot and enjoy!

I want to thank whoever posted about garlic soup and asked people to be nice. I am sicker than a dog right now and can’t do traditional chicken noodle because I’m low carb. I took your garlic soup as inspiration and added chicken, mushrooms and cabbage. And OMG!! 🤤
High Level Recipie:
Roast a bunch of garlic, dump it in a pot
Chop onion dump in same pot
Dump sliced mushrooms, chopped raw chicken and a bag of shredded cabbage
Add giant pat of butter
Stir fry
When chicken cooked and all veggies tender dump in lemon juice, chicken stock or base, water, salt, pepper, parsley, thyme and boil for about 15 minutes
Turn off and resist the urge to burn your tongue eating it because you just couldn’t wait for it to cool down. 😜

Some may not consider this a soup but I do! I’m poor and this is my go to soup!! Boil elbow macaroni as directed, I used 1 1/2 cup) 1 can of tomato sauce, 1 can of diced tomatoes (or rotel if you like some heat) 1/2 stick of salted butter (optional) salt, pepper, and Italian Seasoning to your desired taste!!😊 I am not offended by criticism, because I believe that everyone has an opinion and that counts! That being said God Bless!!

Every day I kearn something new from this community Thank you Barb Chapin Ruh for your post on adding powdered milk to cookie dough. I made sugar cookies and added 1 tbsp of milk powder for every 4 oz of butter. It’s a game changer!!

Owned and operated by Ralph & Donna Quillin & Son Vince Grupposo, Quillin Leather & Tack is a full service tack and leather goods shop and the largest "custom shops" in the nation. They take pride in their craftsmanship and it shows. Halters are made in small batches and their "made to order" philosophy sets them apart as a provider of quality leather goods and service world wide.

Quillin’s has been in business since 1982, based out of their Main St. shop in Paris, KY. On average they make over 17,000 halters a year with 20 employees working in the shop. They also produce many belts, dog collars and personal leather goods plus feature an onsite engraving shop and complete repair service. They recently announced an expansion into a second 4000 sq foot location Downtown Paris on Main St. which will serve as a second showroom and primary halter production space for their growing Export Market.
