I love the new Scrub Jay mural in Downtown DeLand, right across from my booth at the !

He looks like he's looking right at the mushrooms the whole market!

What a great way to bring awareness to one of Floridas iconic endemic species. Scrub Jays habit are the Florida Scrubs, a rapidly disappearing ecosystem that is also one of the rarest ecosystems and diverse in the world.

A whole expression of earth(ecosystem type), and the species that live in that habitat are at risk of disappearing within our lifetimes if development in Florida keeps happening the way it has been.

Local voting can make a difference, I would recommend looking into , he has been fighting this with all his might for years. We need more guys like him in local office who will protect our dying Natural Florida!

It would be very lame if the species disappears turning this mural into a memorial. It would be our fault as a species.

Have you ever seen this blueing color before on Lions mane?

All these years and I still haven't truly figured out beyond theory on why Lion's Mane turns blue when you cook it sometimes. The coloring is almost entirely on the teeth of the lion's mane.

I've noticed acids help keep it around, and it's not dependent on cooking medium(iron or other metals), the color is very similar to when you let garlic sit after crushing it. I believe everything that is causing this reaction is already self-contained within the organism, and is simply enhanced through potential interactions with iron and acidity.

I'm thinking it has something to do with the hericinones or other phenols unique to lions mane converting into quinones and bonding with sulfur rich compounds like glutathione and ergothionine, similar to garlics process. This process with lions mane is called Laccase-Catalyzed Phenolic-Sulfur Coupling. This crazy long science word basically means that the enzymes that are self-contained within lion's mane begin to digest themselves internally through heat instability, converting more complex compounds into basic forms which are extremely hungry for a sulfur group to bind with to balance its electron charge.

There may be other compounds at play too, Lions Mane is a robust biological factory. It is capable of sequestering natural chlorine from the environment to produce its own chlorine based phenols as a defense against oxidative stress!

So the blueing is healthy, very healthy!

Regardless of the science mumbo jumbo, nothing beats Lion's Mane skewers on the grill!

This is about 10 to 15 lb worth of the spent marc after extraction, mostly reishi, but still plenty of turkey, tail and chaga as well.

Just kept it simple and threw in some kefir and yakult to get the microbes going. The primary compounds that the microbes want are the ones that we typically discard. The microbes convert the chitin into plant bioavailable chitosan. This form Is excellent at improving the immune response from insects, molds and other pathogens as well as improving how efficiently plants use water and photosynthesize. Nematodes populations also get destabilized due to bacteria that eat nematodes love high chitin environments.

This will end up being a super awesome foliar spray and soil drench.

Mission Accomplished before the mission even begins.

It's great to know the Delta I can hold. I can drop 15°-20°F from environmental parameters and hold the line at 80°F in the greenhouse.

This means with the current set up, I can maintain outdoor growing season in up to 99°F flash temps, provided the nightly heat soak is mitigated.

Night time temp Deltas need to be locked in next. Gotta keep it under 80°F. That's the true end of season metric.

It feels insane, I still got a couple cards up my sleeve to maintain this growing season and I just got punched in the moufth, I stuck my chin out and grinned at 99°F.

I am targeting year round outdoor production.
If I don't achieve 100% success, I will be pretty darn close and I'll find out what's possible.

July and August I certainly will not underestimate.

Nothing like feeling the heat from the base of a harvest of pink oysters in the palm of your hand.

Pinks love it hot, mushrooms are very metabolically active. Even post harvest they are ALIVE & hungry for a new substrate, that's why dry storage is better than damp storage for mushrooms.

Bring on the gauntlet!

Tomorrow will not be a test, it will simply be a data point.

The temperature from the heat wave will be a nice way to verify how well I can mitigate heat stress and accumulation.

Heat soak is a bigger deal than a short term heat wave. Both offer struggles and death if not handled properly or if it's just too intense.

If the block core temperatures are able to cool off at night, the heat doesn't build up too much and terminate them.

This is the path that brings the highest quality mushrooms consumed for the intention of improving your health. Mushrooms may not need light but the Sun and fresh air can do so much for these organisms when it comes to producing key beneficial compounds for their survival as well as our own. Some outdoor methods even use the term "Wild simulated" implying wild conditions but with the stewardship of a farmer.

I swear outdoor grown mushrooms have more umami too, but maybe that's just in my head.

You are a survivor!

This little guy(or gal) fell out of the bucket arm of one of our tractors during some maintenance, he fell about 15ft onto the metal dump truck bed, not a scratch or injury!
This little one is certainly blessed!

Since we are mushroom farmers and not bird experts, the best chance for survival was to bring the bird to a bird hospital at the Marine Science Center in Ponce Inlet where they can take it from here and give it the chance at life it deserves.

He was too young to identify, Initially I thought he was a big baby and a fish crow, but the bird experts resolved this possibility, hes too small for a fish crow chick and due to its young age it's very difficult to identify the species. He was about the length of the palm of my hand.
