Have you ever seen this blueing color before on Lions mane?
All these years and I still haven't truly figured out beyond theory on why Lion's Mane turns blue when you cook it sometimes. The coloring is almost entirely on the teeth of the lion's mane.
I've noticed acids help keep it around, and it's not dependent on cooking medium(iron or other metals), the color is very similar to when you let garlic sit after crushing it. I believe everything that is causing this reaction is already self-contained within the organism, and is simply enhanced through potential interactions with iron and acidity.
I'm thinking it has something to do with the hericinones or other phenols unique to lions mane converting into quinones and bonding with sulfur rich compounds like glutathione and ergothionine, similar to garlics process. This process with lions mane is called Laccase-Catalyzed Phenolic-Sulfur Coupling. This crazy long science word basically means that the enzymes that are self-contained within lion's mane begin to digest themselves internally through heat instability, converting more complex compounds into basic forms which are extremely hungry for a sulfur group to bind with to balance its electron charge.
There may be other compounds at play too, Lions Mane is a robust biological factory. It is capable of sequestering natural chlorine from the environment to produce its own chlorine based phenols as a defense against oxidative stress!
So the blueing is healthy, very healthy!
Regardless of the science mumbo jumbo, nothing beats Lion's Mane skewers on the grill!
