He was SO tasty. We fed all those people. With my leftovers I made a double batch of knock off olive garden gnocchi soup (8 servings of which are frozen, Moo and I have been eating it twice a day to finish it off because it's amazing)...and I still have half of a gallon ziploc to use! He made SO many meals.
I roasted our 40lb (dressed) tom turkey for Christmas with extended family. It actually worked really well.
-At 350* and split completely in half, he cooked faster than a 20lb bird. I was worried he'd cook too slow and he ended up cooking too fast 😆
- once out of the oven, wrapped in a layer of tinfoil and all the rag towels, he stayed HOT for the entire day.
- we fed 7 adults and 5 picky kids. We sent a gallon+ of leftovers home with Dandelion Homestead , made another bag of misc bits for us AND wrapped a whole breast to slice later. Which is exactly the kind of leftovers I like.
-oh! And! I defrosted him in a cooler a la Alton Brown, and used a semi-milk brine inspired by SunStone Orchard & Rabbitry and he was juicy and tender and amazing. (Only 1 gallon of milk out of 10+ of brine tho. Nobodies got budget for that much milk lmao)
