Our steer has been on grass pasture since he was about 8 weeks old, supplemented by grass hay and alfalfa hay during the winter and drought periods. These last eighteen months he has led a pretty idyllic life, with excellent views, regular licks by his mother, milk until he was 10 months old, and plenty of room to kick up his heels. It’s now time for him to be humanely slaughtered, so please decide on your order by February 1. The meat will be butchered and packaged by Shy Ann Meats in Oregon City.
Please consider purchasing a whole, half, or quarter of beef. It’s a great way to learn about the various cuts. No one cut is better than any other. Some cuts are easier to prepare- like tenderloin, but each cut will have its own unique flavor and texture. Once you have purchased your portion, you will be able to customize your order in consultation with Shy Ann Meats. You can select the cuts that appeal to you and have the remainder made into ground beef or sausage. A minimum purchase is one quarter of beef (approx. 110 lbs.), but feel free to team up with neighbors or friends to help purchase your section. Every 35 to 40 lbs. of beef will take approximately 1 cubic foot of freezer space.
We are assuming that there will be about 440 pounds of meat total, but we will only know the actual amount after butchering. All meat will cost $5 per pound. The $5 cost includes the price of butchering and packaging the meat. A quarter of beef (approx. 110 lbs.) will cost approximately $550. A half of beef (approx. 220 lbs.) will cost approximately $1100. Your order will be ready for you to pick up as soon as February 15.All orders should be picked up from Shy Ann Meats before March 15.
