JC Growers JC Growers Gourmet Garlic & Spice Co. In 2006 Jenny Stotler and Carla Miller purchased Cripple Creek Farm, a five acre farm in Mechanicsburg, Ohio.

The following year JC Growers was born. The brain child of Jenny Stotler, JC Growers was a way to teach her grandchilren, Journey and Alexsa how to grow and preserve healthy chemical free food. The small garden she started, soon exploded into more food than she and her family could use. The next year, JC Growers became a way to teach her grandchildren about marketing, money, and work ethics when t

he girls went to the Champaign Co. Farmers Market to share our abundance of chemical free produce. All of our produce is hand planted, watered and weeded with the help of two little girls whose thirst for knowlege led to the birth of JC Growers. With our sincere appreciation, this web site is dedicated to them.

Garlic Scape Hummus (No Tahini)
Available to sample tomorrow at the
Champaign County Farmer Market!

Ingredients
1 15.5- ounce can chickpeas drained and rinsed
½ cup thinly sliced garlic scapes OR 4 medium garlic cloves chopped

¼ cup freshly squeezed lemon juice
6 tablespoons extra-virgin olive oil
¾ teaspoons fine sea salt
½ teaspoon sweet Hungarian paprika
Instructions
Combine all ingredients in a high-speed blender, with the liquids on the bottom.

Blend until completely smooth.
If you like, you can dress it up for a party by swirling it with the back of a spoon and garnishing with some olive oil, flaky sea salt, paprika, and thinly sliced scapes (or herbs of your choice).
Notes
With the full amount of lemon juice, this recipe is very tangy. We love it that way, but you can halve the lemon juice if you'd prefer less.
Here's the high-speed blender we use.
If you don't have a high-speed blender, you can make this recipe in a food processor — but the result won't be as light and creamy.

Instructions:
1 lb. Garlic Scapes cleaned and cut into 2–3-inch pieces
6 cups of water
1 cube of Knorr Chicken Bouillon
Salt and Pepper to taste
Cook Time approximately 20 minutes
Optional Additions: Onion, Asparagus, Potatoes, Ham

How to Make Garlic Scape Compound Butter

1. Set out your butter at room temperature until completely soft.

2. Rinse and dry your garlic scapes. Then, place 2–3-inch pieces directly into a food processor, mini chopper or mince by hand.

3. Pulse the scapes until they are small pieces. It may take a moment; keep going.

4. Add the garlic scapes to the bowl of your stand mixer or bowl.

5. Using a paddle attachment, run the mixer on low to fully integrate the scapes.

6. If you’re using unsalted butter, add 1/2 tsp sea salt while the butter is mixing. If you’re using salted butter, skip this step

7. Once the butter is fully mixed, place it on a wax paper or parchment. Carefully tuck the edge closest to you over the log. Roll the log of butter up until you’ve used the whole sheet of parchment paper. Twist the ends of the roll of butter like candy. Follow this step again with the remaining butter.

8. Allow to firm up in the fridge. Eat fresh or store in the freezer in an airtight container like a freezer bag!

Garlic scapes are the tender, curly shoots of hardneck garlic bulbs. They offer a milder, sweeter garlic flavor than regular cloves and can be prepared just like asparagus. And with asaragus!
Ingredients:
1 bunch of garlic scapes (about 10 to 15 scapes)
1-2 tablespoons of extra virgin olive oil
Salt and freshly ground black pepper (to taste)
Optional: a squeeze of fresh lemon juice or grated parmesan cheese or both!
Instructions:
Prep the scapes: Wash and thoroughly dry the scapes. Trim off the tough, pale white bottom stems and the pointy tips (the bulbils). Chop the remaining tender stems into bite-sized pieces (about 2 to 3 inches long).
Season:
Place the chopped scapes in a mixing bowl or a zip-top bag. Drizzle with olive oil, then toss to ensure they are evenly coated. Sprinkle with salt and pepper.
Roast:
Preheat your oven to 425°F (220°C). Spread the scapes in a single layer on a rimmed baking sheet.Bake: Roast for 15 to 25 minutes, tossing halfway through, until the tips turn crispy and the scapes are tender and lightly browned.
Serve:
Finish with a light squeeze of lemon juice or a dusting of parmesan cheese, if desired.
