Old South Coca-Cola Pork Loin Recipe
Ingredients:
1 boneless pork loin (approx. 3-4 lbs)
1 cup Coca-Cola
1/2 cup soy sauce
1/4 cup brown sugar
3 cloves garlic, minced
1 tsp onion powder
1 tsp smoked paprika
1/2 tsp black pepper
Serves 6 | Prep time 10 min | Cook time 50 min
How to Make:
Preheat your oven to 375°F.
In a small bowl, whisk together the Coca-Cola, soy sauce, brown sugar, minced garlic, onion powder, smoked paprika, and black pepper to create the marinade glaze.
Place the pork loin in a roasting pan or on a baking sheet with deep sides.
Pour about half of the glaze mixture over the pork loin, reserving the rest for basting.
Roast the pork loin in the oven for 40-50 minutes, basting it with the reserved glaze every 15 minutes, until the internal temperature reaches 145°F and the exterior is beautifully caramelized.
Let the pork loin rest for 10 minutes before slicing into thick medallions, drizzling any remaining pan juices over the top to serve exactly as shown in the image.
💡 Tips: Using a meat thermometer is the best way to ensure the pork stays juicy remove it from the oven once it hits 145°F and let it rest. If you prefer a thicker, stickier glaze, simmer the reserved pan juices in a small saucepan on the stovetop for a few minutes while the pork rests until it achieves a syrup-like consistency.
🧊 Storage Tips: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a covered dish in the oven at 325°F with a splash of water or broth to keep the pork from drying out, or enjoy cold, thinly sliced in sandwiches.
