Cabbage offers significant health benefits due to its high content of vitamins C and K, fiber, and powerful antioxidants like anthocyanins and kaempferol. These nutrients support a strong immune system, aid digestion, contribute to bone and heart health, and possess anti-inflammatory properties that may help protect against certain cancers and cardiovascular disease. Cabbage also supports brain health, assists in weight management due to its low-calorie, high-fiber nature, and is a source of beneficial B vitamins and minerals like potassium and iron. Keep your eyes out for our weekly harvest post and get your farm fresh Cabbage here soon.

Did you know you can save this season's pepper plants for next season? When your peppers are done for the year or the first frost is forecasted, cut the plants back to about 1/3 of their current size. Place them near a sunny window, water only when the soil begins to dry out, and do not fertilize. If you are successful, next season you'll begin with a more mature plant and hopefully have a larger, sooner harvest.

This is an easy recipe if you'd like to try making your own sunflower seeds for eating. Kids love them, and it's an easy harvest-to-table thing they can get in on.

1 cup raw in-shell sunflower seeds
2 1/2 tablespoons kosher salt, or 2 tablespoons table salt
1 quart water
Boil sunflower seeds in salted water:
Place sunflower seeds, salt, and water into a medium saucepan. Bring to a boil. Reduce to a simmer and simmer for 15 to 20 minutes.
Drain the water from the seeds and spread the seeds out in a single layer in a sheet pan. Place in the preheated oven on the top rack and roast for 10 to 20 minutes.
Starting at about 10 minutes, I recommend taking a few out of the oven to test. If they are not roasted yet to your satisfaction, return them to the oven for another 2 to 5 minutes, or as long as it takes until they are dry enough and roasted to your satisfaction. Keep checking every few minutes.

Sunflowers are so much more than beautiful. They provide food for humans and wildlife alike.
