Are 3 days enough time? Usually yes. However you will meet Mr. Stubborn and when you do, add a day...maybe two and get the job done right..
Should you guarantee your work? The answer is again, "Absolutely." If you are confident in your techniques and ability, there is no reason not to guarantee your work..
I can't teach you people skills and telephone etiquette. You must come in knowing this, but the more you do it, of course the easier it becomes. And I am always a phone call away... I learned from doing, just as you will. But my methods have been proven over 40-years of experience and I will gladly help you if and when you need me..
