Watercress is an often overlooked leafy green that packs a powerful nutrient punch.

It is considered one of the most powerful superfoods on the earth 🌍!

Its small, round leaves and edible stems have a peppery, slightly spicy flavor.

Watercress is part of the Brassicaceae family of vegetables, which also includes kale, Brussels sprouts and cabbage.

Once considered a w**d, it was first cultivated in the UK in the early 1800s but is now grown in watery beds throughout the world.

Try incorporating celery, fresh herbs, and leafy greens with some of your favorite local meats and root veggies! 
We are using a Staub cast iron pot for this wonderful roast.

Yummy Fall Recipe!

Stuffed Winter Squash 🍁

1 acorn or butternut squash (cut in half and scoop out seeds)
1 tsp lemon juice
2 tsp chopped garlic or garlic powder
2-3 cups chopped kale
1 cup chopped mushrooms
1/2 cup chopped onion
3/4 tsp salt
1 tsp olive oil
1 cup cooked rice

Step 1
Cook rice according to package directions. Preheat oven to 425°F.

Step 2
Brush 1/2 teaspoon oil over cut sides of squashes; top with 1/2 teaspoon salt. Place squashes, cut sides down, on a parchment paper-lined baking sheet. Bake at 425°F for 20 minutes or until almost tender. Remove from oven.

Step 3
Heat remaining 1/2 teaspoon oil in a large skillet over medium. Add sausage; cook 3 minutes, stirring to crumble. Add onion and celery; cook 5 minutes. Add mushrooms; cook 4 minutes. Add garlic and kale- stirring until wilted. Remove pan from heat; stir in cooked rice, remaining 1/4 teaspoon salt, and lemon juice.

Step 4
Spoon about 1/2 cup rice mixture into each squash half. Bake at 425°F for 10 minutes or until squash halves are tender and lightly browned.

As some of you may know that our parent company HATponics was founded with the intention of feeding the world sustainably. Pretty big goal huh?!
Well we are still trucking along amongst a global pandemic.
We are currently installing 5 systems in 5 locations in the Dominican Republic.
Each of these systems are Aquaponics Systems and will feed 100s of people everyday, create jobs, and enrich their communities with nutrient dense food.

Our founders recently made a trip to get the sites prepared for the build, here are some cool photos of clearing the sites and laying foundations for these portable farm systems.

A few small ways you can make a big difference:

1. Be conservative with water. 💦
Our no waste water system recycles all our water here in the greenhouse 🙌

2. Go Non-toxic 🚫
Buying non toxic home cleaners, shampoos, and organic locally grown food. 🌿

3. Look into using energy saving light bulbs and solar power. ☀️
We are using solar power and other energy effect methods here on our farm!
