Our meats come from animals living their entire lives without prophylactic hormones and antibiotics. While we are not an organic farm we strive to produce the most natural products possible to improve the sustainability of our local community, environment and economy.

Join us Saturday morning from 9 to noon for a cup of red wine punch and check out all our great stuff. Gary will be here with his homemade potato bread. Caribbean Roasted Ham Chunks

2 pounds ham chunks cut into 2 inch pieces
5 garlic cloves, peeled and crushed
2 teaspoon2 salt
1 teaspoon freshly ground pepper
1 teaspoon dry leaf oregano
1/4 cup naranja agria (50/50 fresh valencia orange juice combined with fresh lime juice)
1/4 cup olive oil

Toss ham chunks in a bowl with other ingredients and place in the fridge for 1 hour or more.

Place the meat chunks and the marinade into a roasting pan.

Roast at 250 degrees for 3 to 4 hours. Meat should be browned and crispy on the outside and tender and moist on the inside.

Serve with rice and a salad.

Cincinnati Chili
Recipe

2 lbs Stokes Family Farm ground BEEF
2 Tablespoons olive oil
2 onions, chopped
4 cloves garlic, minced
1 cup water (omit water if you don't have time for a long simmer or add a little more if you are going to use a crock pot)
1 cup dry red wine
1 32 oz. can diced tomatoes
1 small can tomato paste
1 Tablespoons balsamic vinegar
2 teaspoons Worcestershire
3 1/2 Tablespoons cocoa powder
1/4 cup ground chili powder
1 teaspoon ground cinnamon
2 teaspoons salt
2 Tablespoons sugar
1/4 teaspoon ground cayenne (more if you like)
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
2 bay leaves (remember not to eat these)

In a large soup pot brown the ground beef, onion, and garlic in the olive oil.

Add all the dry spices and stir until they are incorporated into the meat and onions mixture.

Add all the wet ingredients and bring the sauce up to a simmer.

Simmer 1 hour over low heat or until it reaches the consistency you like, or cook it all day in a crock pot on low. Serve over spaghetti noodles with optional bowls of grated cheddar cheese and chopped green onions. If you want beans add kidney or cannellini beans when you add your wet ingredients.
