Fat Tuesday, also known as Mardi Gras, originated because meat being forbidden for Lent, along with sweets, eggs, and almost everything else, before refrigeration, meant that massive amounts of food would spoil. So Mardi Gras became a last fling before Lent that would use up all the food that would otherwise be wasted.
