From the Janowski Gardens Cookbook
“Janowski's South of the River Chili"
* 1/2 pound ground beef or diced chicken
* 1/2 pound chorizo or andouille sausage - sliced
* 2 teaspoons chili powder
* 2 teaspoons cumin
* 2 teaspoons dried oregano
* 1 teaspoon minced garlic
* dash cayenne pepper powder
* 1 diced each - hot pepper, green pepper, red pepper, onion, and carrot
* 5 diced mushrooms - sliced
* 3 tomatoes - seeded and chopped
* 1/2 cup corn
* 1/2 cup cooked rice
* 1/2 bottle of your favorite beer - you may drink the rest!
* 1 (8 oz.) can tomato sauce and 3 cans of water
* 1 can of beans - I used black, pinto, lima
* Salt and pepper to taste
* sour cream, shredded cheese, tortilla chips
* Extra cayenne, tabasco, cumin, cilantro if you want
In a big pot, brown meat. Add tomato sauce and water. Add dry herbs/spices. Add vegetables (except beans), rice, and beer. Bring to boil. Add salt & pepper. Then simmer 1 to 1 hours stirring occasionally. Add beans during last 15 minutes. Serve with tortilla chips and sour cream on the side.
