I haven't had to defend my choice of eating carnivore with my family and friends. They have been extremely supportive of my choice and go above and beyond to see to me. How blessed am I that I go over to our closest friend's house and they make a point to grill me a steakπŸ₯©

I have a deep affinity for the 1950s. There is something romantic and beautiful about the aesthetic and food that I can't tear myself away from. A few nights ago I was flipping through lost recipes cookbook. I saw a recipe for a simple ham cake. I instantly thought the recipe could be modified to fit a . This recipe DID NOT disappoint!!!

could easily be frozen once cooked & reheated. These would be good as a main dish or make the cakes smaller and serve as a "side". A little dollop of sour cream would be a nice touch on top of each cakeπŸ–

Carnivore ham cakes

2 eggs, beaten
1 cup pork panko
2 tbsp grated parmesan cheese
8oz finely diced ham
Bacon grease

*Pork panko- Put a few handfuls of pork rinds into a food processor. Blitz a few times until it resembles a course flour*

Mix eggs, pork panko, and parmesan cheese together in a bowl. Add diced ham to the egg mixture. Mix until well incorporated.

Heat a skillet on medium heat. Use about 1/4-1/2 tsp of bacon grease to coat the bottom of the skillet. Using a serving spoon, scoop ham mixture and gently drop in the center of the skillet. Use the back of the serving spoon to gently pat the ham mix into 1/2in thick patty. Cook 5-6 min. Gently flip patty over when the outer edges are brown and cooked through. Once the patty is flipped cook for 2-3 min. Once cooked, gently slide the patty out and onto a plate.

*The mixture is very loose while wet and cooked on 1 side. Once the patty is flipped and cooked through it will become firm.

*keep patties on a smaller size in order to flip without breaking. A spatula is very useful in order to flip the patty without breaking

Carnivore custard

3 eggs
2 cups whole milk
Sprinkle of cinnamon

Heat milk in small pot on medium heat until it begins to bubble. While milk is heating, crack eggs into a medium sized bowl. Whisk eggs together. Slowly drizzle hot milk into eggs while whisking continuously. Transfer mix to a bread loaf pan. Sprinkle cinnamon on top. Bake at *350 for 30min. Sides should be set and the center will have a slight jiggle. Allow to cool for it to set completely.

I had my serving tonight while it was still warm with a 1/2tbsp of kerrygold butter. This custard tastes more like an egg pudding vs an actual custard. I found it to be very good despite no sweetener.

25 days of Christmas!

We do Christmas a little different with our youngest daughter. 3 yrs ago she expressed that on Christmas day she was very overwhelmed with all of the gifts under the tree. Instead of having gifts she wanted to have activities and time with those she loves.

It's a large advent type calendar with small items that bring a little each day to her. We have a family activity each day that ranges from crafts to movies to looking at Christmas lights. Our family is centered on . Lil miss chooses a different person each day to for.

I purchase her joy items from every year. I choose edible treats, bath items, decorative items, crafts, and other goodies that I think she will like.

Her Christmas is technically a ! I save change I find throughout the year to purchase her joy gifts and to pay for most of her activities.

Her was created with a leftover table top that was painted white. 24 small are attached in 6 rows of 4 hooks. The joy sign was a yard sign purchased at and taped to the back of the board. Decorations at the top are purchased at each year to give it a spruced up look. The snack bags that hold her gifts are purchased at... you guessed it... ! Each bag has the number of the day written on the front 1-24. She will receive her final gift under the Christmas tree on

Cost for her this year is $30. This includes her gifts, bags, decorations, & hooks. Her activity items cost $20. Again, I purchased everything with !

As her goes I will make additional small purchases for activities, especially baking πŸ₯§πŸͺ🍬

If anyone else has a child that is overwhelmed on I want you to know you aren't alone. Since starting the joy board we have ALL enjoyed the holiday season so much more!
