Did you know that making hot sauce is more heavily regulated than making alcohol? This is our pH shelf of recent sauces. Among other things, we have to confirm and record 2 pH measurements for every batch of sauce we make, so we always keep around a partial bottle for testing.

The trees are thawing and the sap is flowing in Vermont. Toast to sugaring season with the return of a Gin Lane favorite - Tom Cat Maple Cask!🍁🥃

The story: we first aged our gin in new, American oak barrels. Those barrels were sent to our friends at Sweet Stone Maple Farm to age their decadent Vermont maple syrup. After, they sent the barrels back to us to be re-filled with aged Tom Cat Reserve Gin for an additional 14 months!

I asked our Barrel & Blending Specialist, Mallory, for some tasting notes, but she just sent two words back:

“SO GOOD!!”

Another one for our low-heat fans out there! This 2/6 hot sauce is a mellowed out version of our most popular hot sauce. Our caramelly maple wood smoked onions are a perfect complement to a carmen and red jalapeno blend. This is an easy daily driver because of it's simple complexity.
