Thanks to many research studies today, we know that 70-80 percent of our immune system is located in our digestive tract (gut-associated lymphoid tissue / mucosal-associated lymphoid tissue).

Properly balanced HCL and pepsin in the stomach act as a defensive barrier by killing pathogens. epithelial cells in our intestines secrete a protective mucus. our healthy gut flora helps to feed epithelial cells, stimulate the immune system and kick out the bad bacteria.

But if our digestion is off - so is our natural bodily defenses.

Here are some simple tips for supporting digestion:

Prepare your meals with love (literally putting that energy into it!) or support a local chef that does!

Take a deep breath and try to relax before you eat (our central nervous system needs to be in a parasympathetic state).
🌱
Remove the devices and sit at the table to eat.
🌱
Chew your food thoroughly. (chewing 20-30x helps break down food and makes it easier as it moves further down your digestive tract).
🌱
Take digestive aids if/when necessary like acv, fennel, lemon water, HCL supplements or herbal bitters (*ask your healthcare provider, nutritionist or herbalist to see what works for your own bio-individual needs).

Consume microgreens. Radish micros are known to support digestion but all microgreens are much easier on the digestive system than their larger adult counterparts in raw form.

Try a 3-day whole food gut cleanse with (serving our micros, nourishing bone broth from and kombucha from ). It’s offered on a monthly basis whenever you’re ready join us. 🙏🌱

I am blown away. Truly. For being recognized best of the Hudson Valley for two years in a row (three times total). I am hardly the best farmer. There are many that have come before me, many amazing growers here right now working in their field and specific industry, and many that are yet to come. There is always a sense of imposter syndrome when you are the first generation or doing something outside of the box (indoor vertical organically grown vs traditional farming).

The most gratifying part of growing food for the community is the connection and meeting all of you. It’s seeing our greens come to life on your plate, knowing that the micros aren’t just adding aesthetic but also flavor and nutrition.

Thank you from the bottom of my heart. It’s been quite a journey of growth, lessons, and figuring it out as we raise a family, take care of our health, and remember to stay present as much as possible as we celebrate five years of in late November.

“Aerodynamically a bee’s body is not made to fly; the good thing is that the bee doesn’t know”.
The law of physics says that a bee cannot fly, the aerodynamic principle says that the breadth of its wings is too small to keep its huge body in flight, but a bee doesn’t know, it doesn’t know anything about physics or its logic and flies anyway.
This is what we can all do. Fly and prevail in every moment in the face of any difficulty and in any circumstance despite what they say.
Let us be bees, no matter the size of our wings, we take flight and enjoy the pollen of life.
