Ingredients:
- ๐ซ 1/2 cup fresh or frozen blueberries (no added sugar)
- ๐ 1 cup pure pumpkin puree (unsweetened, no added spices)
- ๐พ 2 cups whole wheat flour
- ๐ฅฃ 1/2 cup rolled oats
- ๐ฏ 1 tablespoon honey (optional)
- ๐ฅ 2 large eggs
Instructions:
1. ๐ฅ Preheat the oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper or lightly grease with non-stick spray.
2. ๐ซ If using frozen blueberries, thaw and drain them well.
3. ๐ In a large bowl, combine the pumpkin puree, eggs, and honey (if using). Mix well.
4. ๐ Add the whole wheat flour and rolled oats to the wet ingredients. Stir until a dough forms.
5. ๐ฅ Gently fold in the blueberries until evenly distributed.
6. ๐งโ๐ณ Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
7. ๐ช Use cookie cutters to cut out shapes, or simply cut the dough into squares with a knife.
8. ๐ฅ Place the cut-out shapes on the prepared baking sheet.
9. โฒ๏ธ Bake for 20-25 minutes, or until the chews are firm and golden brown.
10. โ๏ธ Allow the chews to cool on a wire rack completely before serving.
Storage:
๐ฆ Store the chews in an airtight container in the refrigerator for up to a week or freeze for up to three months.
