Caramelized Butternut Squash, Carrots, Broccoli & Sweet Potato with Feta, Walnuts & Cranberry-Honey Glaze

3 cups butternut squash, peeled & cubed
2 medium carrots, sliced
2 cups broccoli florets
1 large sweet potato, peeled & cubed
