Make the Most of Your Green Swamp Farms Squash & Zucchini Harvest! 🌱

When your garden is producing more squash and zucchini than you can eat fresh, here are some great ways to preserve it for months to come:

❄️ Freeze It

The easiest and most popular method.

For sliced squash or zucchini:

1. Wash and slice into ½-inch pieces.
2. Blanch in boiling water for 3 minutes.
3. Immediately cool in ice water.
4. Drain well and package in freezer bags.
5. Freeze for up to 10 months.

For baking later:

* Shred zucchini.
* Measure into 2- or 3-cup portions.
* Freeze in bags for zucchini bread, muffins, cakes, or fritters.

🥒 Make Pickles & Relishes

Plain zucchini and summer squash are not recommended for home canning, but pickled recipes and relishes are safe and delicious. Bread-and-butter squash pickles are always a favorite.

🌞 Dehydrate It

* Slice into ¼-inch rounds.
* Dry in a dehydrator until brittle.
* Store in airtight jars.

Use dried squash and zucchini in soups, stews, casseroles, or as seasoned veggie chips.

🍞 Turn It Into Freezer Meals

Prepare and freeze:

* Zucchini bread batter
* Squash casserole
* Stuffed zucchini boats
* Vegetable soup
* Zucchini muffins

Frozen zucchini works best in cooked dishes because it softens after thawing.

🍍 Make Zucchini “Pineapple”
Pinachini is what I call it.

A longtime homestead favorite! Zucchini is canned with pineapple juice, lemon juice, and sugar to create a pineapple-like product for desserts, fruit salads, and baking.

Fresh Uses Before Preserving

* Fry green tomatoes and squash together
* Grill zucchini spears
* Make squash casseroles
* Add to stir-fries
* Shred into meatloaf, spaghetti sauce, or burgers for extra vegetables

We are now less than a week away from Squirrel AWAY’s first official Market Day, and I hope you all will come visit for a great day of shopping & eating with the following local small businesses! I couldn’t be more excited & I truly want all to have nothing but success at Squirrel Away!
