As we head into the new year, many people want to do things to change things up. If you are one of those who want to start living, feeling and eating healthier, these little micros are a great place to start! Microgreens are packed with nutrients. While there nutrient contents vary slightly, most varieties tend to be rich in potassium, iron, zinc magnesium and copper. Microgreens are also a great source of beneficial plant compounds like antioxidants. Mix them up in a smoothie or grind them up, then fold them into baked goods, pancakes, or oatmeal.
