Rashid Nuri to meet the fresh food needs of families in the local Atlanta community. The objective was to bring nutritionally-rich, fresh-picked produce to local residents through a community supported agriculture program. Rashid tapped Eugene Cooke, a master farmer with international training, to help develop sustainable urban farms in Metro Atlanta. In 2007, TLW received non-profit status. The w

ork of TLW then expanded to include agricultural education and training. The Truly Living Well Center builds communities by providing healthy food, agricultural education and job creation. Our model supports urban economic development through growth of local businesses. TLW is a model for a local sustainable food system. Creating food abundance is the foundation for community food security and self-sufficiency. Truly Living Well demonstrates the viability of producing high quality, naturally grown fruits and vegetables in the urban environment. Our five farm sites in Metro Atlanta produce Certified Naturally Grown fruits, vegetables, herbs, flowers and other added-value products. Our model establishes the transformative power of urban agriculture. Truly Living Well demonstrates the potential of a renewed paradigm – the local food economy. Our staff has grown from two to over thirty people. In addition, hundreds have been trained by TLW in urban agriculture practices. More than 4,000 people visit TLW annually. We host educational programs that involve young people of all ages. Partnerships and collaborations with area colleges, universities, school systems and other organizations provide opportunities for everyone to connect with the land.

Hey it's ! Try this Eggplant "bacon", make the best BLT you've had VEGAN STYLE!

Eggplant “bacon”
When marinated in salty and smoky seasonings and cooked in a skillet, thinly sliced eggplant may serve as a vegan version of crispy bacon.

To make eggplant bacon, start by using a mandolin or sharp knife to cut the eggplant into long, thin slices.

Heat a heavy drizzle of canola or avocado oil in a large skillet over medium heat.

Then combine 1/4 cup (60 mL) of reduced sodium soy sauce with 2 tablespoons (30 mL) of maple syrup, 2 teaspoons (10 mL) of vegan Worcestershire sauce, and 1–2 teaspoons (5 grams) of smoked paprika. Brush both sides of each eggplant slice with the mixture.

Arrange the eggplant slices in the skillet, and cook for 4–5 minutes on each side until crispy and slightly charred. Transfer the eggplant “bacon” onto a plate lined with paper towels. Continue cooking the eggplant in batches.

Healthy soil is that which allows plants to grow to their maximum productivity without disease or pests and without a need for off-farm supplements.

Healthy soil is teeming with bacteria, fungi, algae, protozoa, nematodes, and other tiny creatures. Those organisms play an important role in plant health.

Soil bacteria produce natural antibiotics that help plants resist disease. Fungi assist plants in absorbing water and nutrients. Together, these bacteria and fungi are known as “organic matter.” The more organic matter in a sample of soil, the healthier that soil is.
