Oh Shiitake,
What a love/hate relationship we have with you.
The world clearly loves it. We absolutely love to grow this mushroom, but it take up so much real estate that for a small farm, it doesn't make sense to grow it all year round.
You can bet your bottom dollar that these were grown and harvested by Texans because we only sell and distribute what we grow.
Fun-fact: The majority of shiitake consumed in America did not originate in America. The substrate (growing medium) was produced in China, shipped over in containers, and then unloaded off a container reeking of formaldehyde. "Shiitake Growers" then pop those Chinese substrate logs into a fruiting room, and boom, Chinese shiitake masked as an organic American crop. Some of those shiitake "growers" are much closer than you think.
We've allowed this to happen for too long. Maybe our lawmakers in power will do something about it if we band together and raise some cain.

The flavor on these is top-notch and probably our favorite mushroom to eat.
