A familiar and popular garden songbird whose numbers have declined markedly on farmland and in towns and cities. It's smaller and browner than a mistle thrush with smaller spotting. Its habit of repeating song phrases distinguish it from singing blackbirds. It likes to eat snails which it breaks into by smashing them against a stone with a flick of the head.

The snow goose is a medium-sized goose, rather thin-necked with a stout bill. It occurs in two colour forms, one all white with black wing feathers which are obvious in flight, the other white-headed with a blue-grey body and wings. It does not breed in the UK, except where escaped from captivity. Wild birds breed in Greenland, Arctic North America and Siberia - some migrate south in the autumn to spend the winter on the Atlantic coast of the USA.

Arguably the most attractive of the UK's breeding grebes, with its golden ear tufts and trilling calls. It looks similar to the black-necked grebe in winter but has whiter cheeks which almost meet at the back of the neck. Due to its small breeding population it is a Red List species.

Невероятное лакомство! Простое до невозможности, вариабельное, минимум продуктов и усилий. А каков эффект!

Суть: сладкие сливки, загущенные желатином. Это в идеале. Можно добавить любые фрукты. Ароматизировать ванилином. Можно сахара положить столько, сколько считаете нужным. Сливки разбавить молоком, или вообще сделать только на молоке. Количество желатина можно варьировать, или заменить на агар-агар.

В общем, как душа ваша пожелает!

Я очень люблю разбавлять вкус десерта чем-нибудь кисленьким, поэтому добавила слой из красной смородины.

Ингредиенты:
Фруктовый слой:
- 70 гр пюре красной смородины (готовый или самодельный)
- 1 ст л сахара
- 2,5 гр листового желатина

Сливочный слой:
- 300 гр сливок 35%
- 1 ч л ванильной эссенции (или полстручка ванили, или 0,5 ч л ванильного сахара)
- 2-3 ст л сахара
- 7, 5 гр листового желатина

Процесс:
1. Листовой желатин замочить в ледяной воде на 5 минут. Если желатин порошковый, то соотношение желатин : вода = 1 : 6. Желатин нельзя кипятить, поэтому вводим в горячую жидкость, сняв предварительно сотейник с огня.
2. Пюре красной смородины с сахаром прогреть почти до кипения. Ввести заранее замоченный желатин, размешать до полного растворения. Залить небольшим слоем на дно форм и дать полностью застыть в холодильнике. Понадобится 2-3 часа.
3. Сливки, ваниль и сахар прогреть почти до кипения, добавить заранее замоченный желатин, растворить и дать остыть до комнатной температуры.
4. Сливочную смесь залить поверх фруктового слоя и дать полностью застыть в холодильнике. Лучше на ночь.
5. Самое главное, соблюсти правило: фруктовый слой должен быть очень хорошо охлаждён, а сливочная смесь должна быть максимально комнатной температуры. Тогда слои не смешаются.
6. Слои можно поменять местами: сначала сливочный, потом фруктовый. Для ароматизации хорошо подойдёт мята, не только ванилин

The red grouse is a medium-sized game bird. It has a short tail and a lightly hook-tipped bill. It is reddish-brown, with its legs and feet covered in pale feathers. Birds breed in the UK in the uplands of the north and west and are resident all year round, travelling very little in their lives. The population is declining, perhaps linked to diseases and the loss of heather moorland.

The razorbill is a medium-sized seabird. It is black above and white below. It has a thick black beak which is deep and blunt, unlike the thinner bill of the similar guillemot. It breeds around the coast of the UK, with the largest colonies in northern Scotland. There are none breeding between the Humber and the Isle of Wight. Birds only come to shore to breed and winter in the northern Atlantic. The future of this species is linked to the health of the marine environment. Fishing nets, pollution and declining fish stocks all threaten the razorbill.

A medium-sized slim wader with a dark grey back and white underparts. Its long green legs and slightly up-turned bill help to distinguish it from other waders. It calls regularly and is seen singly and in small groups.

A small, green warbler similar in size to a goldcrest. The yellow 'eyebrow' is distinctive, as is the coal tit-like call.

Yellow-browed warblers breed in Siberia, and occur in the UK every year as they migrate south-westwards.

The goshawk is a large hawk, almost reaching buzzard size. When up close it has a fierce expression with bright red eyes and a distinctive white eyebrow. Its broad wings enable it to hunt at high speed, weaving in and out of trees, and its long legs and talons can catch its prey in flight. The female is substantially larger than the male. In late winter and spring it has a 'sky-dance' display. Goshawks are a Schedule 1 species. They are still persecuted and their nests are frequently robbed.
