肉類,更準確地用生物學的方式說,「肌肉」,是組成一餐均衡生鮮餐食的主要食材。
其中包括了「不帶骨肉類、脂肪、舌頭、心臟、胃、肺、胗、各式軟骨及筋」都可以稱得上是肌肉
犬貓需要大量的蛋白質來維持身體機能,且他們需要從餐食中的肌肉取得身體所需的熱量及氨基酸
生鮮餐食中,肌肉的組成約佔60~80%,這些肉類不但提供蛋白質還提供了必需的營養素,包含「水溶性維生素」及「礦物質」
肉類根據肌肉纖維分成兩大類:「慢縮肌纖維」及「快縮肌纖維」
慢縮肌纖維包含大多數的紅肉,例如:牛肉、羊肉、鴨肉、豬肉、鹿肉。這類的肌肉有攜帶氧氣的功能、含有較高的肌紅素及血紅素,因此呈現的顏色較為鮮紅
快縮肌纖維則包含大多數的白肉,例如:雞肉、火雞、兔肉、鵪鶉。這類肌肉含有較少的肌紅素,因此呈現的顏色較不鮮豔
簡單來說,紅肉較白肉來得更加營養且含有更高密度的蛋白質、維生素、礦物質及氨基酸

Fast twitch muscle fibres are white meat, for example: chicken, quail, turkey and rabbit.
White meat muscle has a lower level of myoglobin therefore it shows a lighter colour
Simply put, red meat is more nutrient dense compared to white meat and it gives a higher concentration of protein, vitamins, minerals and amino acids
