Canard Au Vin. When the ducks, with age, stop laying eggs we use cooking techniques, braising and slow oven roasting here, to prepare tender and flavorful dishes with the older meat. The last two white Peking Ducks will be kept as a mating pair, seen swimming with our new young Khaki Campbells.
