Oyster mushrooms shawarma 🥙
Here is the recipe for Mushroom Shawarma that you ate during the visit.
This dish has two parts: the mushroom and the salad preparations.
Ingredients for “mushroom meat”:
✅ 300-500 grams of oyster mushrooms per person
✅ Spices: Black pepper, cumin, oregano, paprika, cayenne pepper, garlic, turmeric, coriander, chili pepper, or simply buy a kebab seasoning in any shop.
✅ Pickled lemon; if you cannot find it, use fresh lemon
Fresh lemon juice
✅ 1 red onion for each 300-500 grams of mushrooms
Salt
✅ 1.5 tablespoons of olive oil for each 300-500 grams of mushrooms
Mushroom Shawarma Preparation:
Shred or cut the mushrooms lengthwise. You can follow the direction of the gills.Place the shredded mushrooms inside a large pot. Fill it with water until the mushrooms are floating but not yet covered. Add salt and bring to a boil.Once boiling, reduce the fire to low and cook for 30-40 minutes.While boiling, cut the onion into thin slices. Mince the pickled lime and prepare the spices.After 30-40 minutes of boiling, rinse the water off the mushrooms.Add the onion, pickled lime, olive oil, spices, and mix thoroughly. Add salt to taste.Lay mushrooms out on a big tray in a single layer so they can bake evenly.Bake at 180 degrees for 30-40 minutes.
Salad Ingredients:
✅ 1 paprika
✅ 2 small cucumbers or half of a large one
✅ 2 tomatoes
✅ 10-15 leaves of mint
✅ 100 grams of cashews
✅ 1 lemon
✅ Salt and pepper to taste
Salad Preparation:
Chop all veggies into small cubes.Finely chop the mint leaves.
Cashew sauce preparation: add cashews to a blender, add the juice of the lemon, 1 garlic clove, salt to taste. Add water until cashews are barely covered and blend until smooth.
If cashews are not available, the non-vegan version can be made by adding Greek yogurt.
Mix the sauce and vegetables together.
