THE FUNGI ROOM
If you're in London, make sure to drop by The Fungi Room in Tottenham. Here, you can see mushrooms growing in specialised grow cabinets equipped with environmental controls, created by Fat Fox Mushrooms. These mushrooms are freshly harvested and incorporated into the menu at the Unit 3 Cafe. While you're there, you can also try a cup of tea or coffee infused with our medicinal mushroom tinctures. This is our resident giant antler reishi Matilda 💪 isn’t she a beauty? 🔥 It’s mighty hot in London, but all of our reishi mushrooms are loving it!

Reishi are usually slow-growing mushrooms, but believe it or not they not only do well during hot weather - they actually thrive! If you’re growing a reishi kit now, you can expect it to have an impressive growth spurt over the next few months (just make sure they’re not in direct sunlight since like us, they will burn! Matilda was only outside briefly for the photo shoot and returned safely indoors soon after).

It’s dryads saddle season! 🌿🍄‍🟫☀️

If you’ve been seeing lots of posts about this mushroom on your feed but haven’t been able to find it on your walks, you’re in luck because this is a wild mushroom that you can grow yourself.

We’ve noticed that our kits seem to know when it’s spring because they fruit a lot more readily at this time of year, even though they’re being grown indoors 🤔 it’s quite mysterious!

If you’ve been fancy giving it a go, we have both ready-to-grow kits that you can grow in your kitchen or plugs for starting your very own dryad’s saddle log for the garden. These are the largest capped mushrooms in the UK and when grown on logs, they can get to massive sizes, usually up to 30cm, but some as big as 60cm have been recorded!

They’re best eaten when harvested young though, which is why growing your own that you can keep a close eye on is handy. But if you just want to see how big it can get, it would make quite an impressive sight in your garden!

Couldn’t resist taking our cordyceps outside for a photoshoot in the sun ☀️ it positively glows!

Cordyceps is known for its health benefits, particularly with regards to naturally supporting energy levels, but did you know it’s also delicious to eat? We love to have them simply pan fried with butter and salt to bring out their natural sweetness and umami goodness. They’d make an excellent topping on noodles or pasta!

This is a UK-native wild strain that we got from 🍄
There are still a few of these available to buy on our website - get them quick before it gets too warm for them to grow!

How cool is this gnarly zombie gnome with a reishi growing out of his head? 😮

The alien-like structure of reishi lends itself well to sculptures and it’s brilliant to see someone using it in such a unique and creative way. If you’ve made something artistic with reishi you’ve grown from one of our kits, we’d love to see it!

It was an absolute pleasure teaching our very first mushroom mentees .selkie and all about mushroom cultivation! 🍄‍🟫

Over the 5 day practical course, they got stuck in at every stage of the process, from prepping and sterilising substrate and grain, making their own liquid cultures and agar plates, having a go at different inoculation methods and much more!

We had a blast and hope you did too! We absolutely love connecting with other people passionate about fungi - and we’re excited to slowly grow a little mushroom community from our mentee graduates 🍄🌱

We messed up! But the results are spectacular 🤭

We accidentally filled a skull with speckled chestnut mycelium instead of antler reishi which left our lovely customer .fish666 rather confused about the unexpected mushrooms! But she noticed there were lots of pins growing up the sides of the jar, so she decided to free them to see if they would grow.

And what a fine result! We’re rather chuffed with how this speckled chestnut skull turned out and pretty impressed with how it just wants to keep on fruiting 💪

Spring is in the air! ⛅️🌱

Time to get planning what you want to grow in the coming months (or perhaps you’ve already started!) But it’s not just a good time to start thinking about sowing seeds - if you’re itching to get busy with some jobs in the garden or allotment, it’s also the perfect time to inoculate some mushroom logs or set up some edible mushroom beds 🍄‍🟫

Pictured here is a gorgeous cluster of phoenix oyster mushrooms, but we also have plenty of other species to choose from - and what’s more, they’re all strains that have been carefully isolated from specimens collected in the wild in the UK, making them perfect candidates for outdoor grows.

If you’re a keen forager, you’ll be pleased to know that you can also grow more unusual mushrooms such as beefsteak fungus, velvet shank and dryad’s saddle! All you need are some fresh cut logs (no more than 6 weeks since cutting - we recommend for sustainably harvested logs) and some of our mushroom dowels. With logs, it’s a waiting game since it can take 1-2 years for mushrooms to sprout, but your patience will be rewarded as you’ll get mushrooms for many years to come. Want some tasty mushrooms sooner? Try our sawdust spawn to create a mushroom bed instead 👍
