There's nothing quite like a hearty homemade casserole when the weather turns chilly.

This week's Food Friday brings together tender chunks of Cowal Deer venison, carrots, onions and a rich savoury gravy. Leave it to cook gently and let the flavours develop into a proper comforting family meal.

Serves 4

Ingredients:
- 800g Cowal Deer diced venison
- 2 onions, chopped
- 3 carrots, sliced
- 2 celery sticks, chopped
- 2 garlic cloves, crushed
- 2 tbsp tomato purée
- 500ml beef stock
- 150ml red w**e (or additional beef stock)
- 2 tbsp plain flour
- 2 tbsp oil
- 2 bay leaves
- 1 tsp dried thyme
- Salt and black pepper
Method:
1. Preheat the oven to 160°C / 140°C fan.
2. Place the diced venison in a bowl, season with salt and pepper and toss in the flour.
3. Heat one tablespoon of oil in a large ovenproof casserole dish.
4. Brown the venison in batches, then remove and set aside.
5. Add the remaining oil, onions, carrots and celery and gently cook for 5 minutes.
6. Stir in the garlic and tomato purée and cook for another minute.
7. Return the venison to the dish and pour in the red w**e, if using.
8. Add the beef stock, bay leaves and thyme, stirring everything together.
9. Cover with a lid and place in the oven for approximately 2½–3 hours, or until the venison is beautifully tender.
10. Remove the bay leaves, check the seasoning and serve with mashed potatoes, crusty bread or seasonal vegetables.

Something special for Food Friday this week!

Tender Cowal Deer venison steaks served with a rich, creamy mushroom and mustard sauce. It's a delicious way to enjoy locally sourced venison without spending hours in the kitchen. Perfect with buttery mashed potatoes and seasonal greens.

Serves 2

Ingredients:
- 2 Cowal Deer venison steaks (approximately 150–200g each)
- 200g mushrooms, sliced
- 1 shallot, finely chopped
- 2 garlic cloves, crushed
- 100ml beef stock
- 100ml double cream
- 1 tsp Dijon mustard
- 1 tbsp butter
- 1 tbsp oil
- Salt and black pepper
- Fresh parsley, chopped
Method:
1. Remove the venison steaks from the fridge around 20 minutes before cooking.
2. Pat the steaks dry and season with salt and black pepper.
3. Heat the oil in a heavy frying pan over a medium-high heat.
4. Sear the venison steaks on both sides until nicely browned, adjusting the cooking time to their thickness.
5. Remove the steaks from the pan and rest somewhere warm.
6. Reduce the heat and add the butter, shallot and mushrooms.
7. Cook for around 5 minutes until the mushrooms are golden, then add the garlic.
8. Pour in the beef stock and simmer for 2–3 minutes.
9. Stir in the cream and Dijon mustard and gently simmer until the sauce thickens.
10. Return the steaks briefly to the pan if needed to finish cooking, then spoon over the sauce and sprinkle with fresh parsley.
For food safety, cook the steaks to a core temperature of 75°C, or an equivalent validated time-and-temperature combination.
