For most gundogs, holding something in their mouth is inherently reinforcing. It might be that they greet you with a slipper in their mouth, or that they carry a ball on their walks, parade a toy when you're playing with them or have a favourite teddy they use equivalent to a child's dummy.
Taking an article from dogs who value whatever it is they have, either because it has intrinsic value (the dog naturally wants access to the item), or extrinsic value (humans have given the article value, usually inadvertently) can result in a dog that attempts to maintain possession, maybe by running off with the item, or taking it to their bed, turning their head away from you or, if these behaviours have previously failed because the dog has still lost possession of the article, they may escalate and try to repel you by growling, teeth baring, snarling, snapping or biting.
Teach your dog (any breed of dog, not just gundogs) that giving something to you leads to a great reward. Work on this from puppyhood. Swap any item you take from them with something else. Make sure they look at you with positive anticipation when you approach them when they have possession of something, because they expect you to deliver something great to them (rather than dreading you taking their item away). Also ensure you have appropriate items available for your dog to put in their mouths whenever they might look for something undesirable to pick up.
